(Mostly) Whole Wheat Banana Bread
This is our family’s favorite banana bread recipe. For a change of pace, or if you only want to use one bowl or you’re committed to 100% whole wheat, try Rebekah’s Whole Wheat Banana Bread too.
I usually double the recipe and give one away or freeze one.
Preheat oven to 350 and grease 9x5 loaf pan.
Bowl 1 (large bowl):
· ½ c. butter, softened
· ¾ c. brown sugar
· 1 egg.
Cream butter and sugar till light and creamy; beat in egg. (Works fine by hand.)
Bowl 2: Sift together
· 1 c. whole wheat flour
· ½ cup white flour
· 1 tsp. baking soda
· ¾ tsp. salt
Bowl 3: Combine
· 1 ¼ c. mashed banana (2 large or 3 small)
· ¼ c. buttermilk or yogurt
Add dry ingredients alternately with banana stuff to butter mixture, stirring just enough to combine well.
Bake 50-60 min. or till toothpick comes out clean.
Cool 10 minutes before removing from pan.
