Beast Stew
2 T oil
2 lb cubed beef from whatever roast you've got, or whatever similar animal your husband killed in the fall
2 t thyme or oregano
1/4 t salt
1/4 t pepper
6 medium carrots, peeled and chunked
4 stalks celery, chunked
2 medium onions, chunked
6 c beef broth
1/3 c flour
Brown meat in oil over medium-high heat with seasonings. Remove and set aside. Cook carrots, celery, and onions in skillet for 5 minutes, then add meat back in. Whisk broth and flour together in a bowl and then add to skillet. Bring to boil and reduce heat. Simmer for 45 minutes or more until it's as thick as you want. Serve over mashed potatoes. Ignore 3-yr-old whining that he doesn't like mashed potatoes. Seriously, what kind of kid doesn't like mashed potatoes?
Freeze leftovers to feed everybody again after the baby is born.
