Chicken, Lentil, and Barley Soup


Chicken, Lentil, and Barley Soup

 

1 c chopped onion

1 c chopped bell pepper

1 clove garlic, minced

2 T oil

2 cans chicken broth

1 1/2 c water

1/2 c dry lentils, rinsed and drained

1/2 t basil

1/4 t oregano

1/4 t rosemary

1 1/2 c chopped chicken or turkey

1 1/2 c sliced carrost

1/2 c quick-cooking barley

 

In a saucepan, cook onion, pepper, and garlic in oil until tender. Stir in broth, water, lentils, and spices. Bring to boiling, reduce heat, cover and simmer for 20 minutes. Stir in chicken, carrots, and barley; simmer 20 minutes or until carrots are tender.

 

(Or use regular barley before you put the chicken and carrots in and let it simmer until the barley is done.)

 

When kids suspiciously ask what barley is, tell them it's rice.
