Cranberry Apple Casserole

Cranberry Apple Casserole

 

Had success with this one at potlucks. Good addition to guest breakfasts, too.

 

Ingredients

 

  • 2/3 cup sugar
  • 2 Tbs flour
  • 4 cups peeled, sliced apples
  • 2 cups cranberries, dried or fresh
  • 2 1.23 oz. instant cinnamon and spice oatmeal packets. Or just throw together your own.
  • 3/4 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1/3 cup butter, melted

 

 

Directions:

 

  1. Preheat oven to 350 degrees.
  2. Stir together sugar and 2 Tbs flour. Add apple slices and cranberries; toss to coat. Transfer to 2-quart casserole.
  3. In seperate bowl, mix oatmeal, pecans, brown sugar, and 1/3 cup flour. Stir in butter until moistened. Sprinkle over fruit.
  4. Bake for 45 minutes or until fruit is tender. If necessary to prevent overbrowning, cover with foil for last 10 minutes of baking. Serve warm.
