Curried and Fruited Chicken Salad
Even better if it's made the day before, or at least several hours in advance.
Ingredients
- 4 boneless skinless chicken breast halves, cooked and diced
- 1 stalk celery, diced
- 4 green onions, chopped
- 1 crisp apple, diced
- 1/3 c. craisins
- 1/2 c. green grapes, halved or quartered
- 1/2 c. toasted pecans (optional)
- 3/4 c. mayo or miracle whip
- 1/8 tsp. ground black pepper
- 1/2 tsp. curry powder
- splash lemon juice
Combine all ingredients!
