Jiffy Corn Casserole

 

Great potluck application.

The recipe says the cheese is optional, but cheese is not optional around here.

 

  • 1 can whole kernel corn, drained
  • 1 can creamed corn
  • 2 eggs, beaten
  • 1 box Jiffy corn muffin mix
  • 1 stick butter, melted
  • 1 c. sour cream
  • ¼- ½ tsp. garlic powder (optional)
  • shredded cheese

 

Mix all except cheese.  Sprinkle cheese on top.  Bake in casserole dish or 9x13 for 40-50 minutes at 350 or until fully cooked in center.
