Lasagna


Superior Lasagna

 

1 lb Italian sausage

1 clove garlic, minced

1 T basil

1 1/2 t salt

1 14.5 oz can diced tomatoes

2 6 oz cans tomato paste

10 lasagna noodles

2 eggs

3 c. ricotta cheese

1/2 c. grated Parmasan or Romano cheese

1 T parsley flakes

1 t salt

1/2 t pepper

1 lb mozzarella, shredded

 

Brown meat and drain fat. Add next five ingredients and 1 c. water. Cover and simmer for 15 minutes, stirring often. Cook noodles in boiling water until tender but not floppy/slimy. Beat eggs and mix in remaining ingredients except mozzarella.

 

Layer half of the noodles in a 9x13 baking dish. Spread with ricotta, then half the meat sauce and half the mozzarella. Repeat. Bake at 375 for half an hour (or assemble early and refrigerate; bake 45 minutes). Let stand 10 minutes before serving.

 

The Lasagna Rules; VERY IMPORTANT

 

 

1. Italian sausage, NOT ground beef

2. Ricotta, NOT cottage cheese

 

 

You can ignore these rules, but then your lasagna will not be Superior.
