Mexican Casserole

 

5 flour tortillas

1 lb ground beef

½ c. chopped green pepper (optional)

½ c. chopped onion

1 envelope taco seasoning mix

8 oz tomato sauce

6 oz tomato paste

½ c. sliced ripe olives

¼ c. water

½ tsp. chili powder

1 c. sour cream

2 eggs

¼ tsp. pepper

2 c. broken corn chips

2 c. Monterey Jack cheese, shredded

 

Brown meat with onion and pepper. 

Add taco seasoning, tomato sauce and paste, olives, water and chili powder. 

Simmer 10-15 min, till slightly thickened.

 

In small bowl, blend sour cream, eggs, and pepper.

 

Put 2 tortillas in bottom of 12x8 dish.

Layer ½ meat mixture, then ½ sour cream mixture.  Repeat. 

Sprinkle with corn chips and cheese.

 

Bake 350 about 25-30 min.
