Oven Crispy Fish

 

1/3 c flour (you can use all whole wheat if you want)

1/4 t pepper

 

1 egg

2 T water

 

1 c well-crushed cornflakes

1/2 onion powder

1/2 t seasoned salt

 

1 lb whatever white fish you've got (they're all basically the same, right?)

 

Combine flour and pepper in a shallow dish. In a second dish, beat the egg with the 2 T water. In a third dish, combine cornflakes and seasonings. Dredge fish in flour, then dip in eggs, then coat in crumbs. Place on a greased baking sheet and bake at 425 for 10-15 minutes or until fish flakes with a fork.

 

You could also do this with chicken, but it would have to bake a lot longer. We eat this with oven fries and congratulate ourselves for being so healthy.
