Picnic Pasta Salad

 

It’s good.  It’s easy.  You make it the night before.  And no worrying about mayo in the sun. 

 

  • 1 lb. mostaccoli, cooked (ribbed is best)
  • 1 onion, chopped (I sometimes use part red)
  • Large pepper or two, chopped
  • 1 cucumber, chopped

 

Dressing:

 

  • 1 Tbs. salt
  • 1 tsp. garlic powder
  • 2 Tbs. parsley
  • ½ tsp. pepper
  • 2 tsp. yellow mustard
  • 1 ½ c. sugar (start with less and add to taste)
  • 2 c. white vinegar

 

Mix all together and marinate overnight.
