Pumpkin Applesauce Muffins


Not as dense as I expected from 100% whole wheat!  Lightly sweet but the kids still thought they were a treat. 




  • 2 c.whole wheat flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 2-3 tsp. pumpkin pie spice (or equivalent)
  • 2 eggs, beaten
  • 1 c. pumpkin puree
  • 1/4 c. sugar
  • 2 c. applesauce (I used unsweetened)
  • 2 Tbs. canola oil
  • 1 tsp. almond  extract



Preheat oven to 350. 


Mix flour, soda, powder, and spices in one bowl and the rest of the ingredients in another.  Add the dry ingredients to the wet slowly, stirring just to mix.   


Bake 15-20 min. or until the toothpick thing works out for you.  Cool in pans for a few minutes before removing.



Makes 18.
