Scones


Simple Scones

 

Pretty easy, and will definitely make you look cool at the next Ladies Aid meeting.

 

Ingredients

 

 

 

1. Adjust oven rack to lower-middle position and preheat oven to 400°.

 

2. In medium bowl, mix flour, sugar, baking powder, baking soda, and salt. Grate butter into flour mixture on the large holes of your box grater. Use hands to work butter into flour until mixture resembles coarse meal. Add currants.

 

3. In small bowl, whisk sour cream and egg until smooth.

 

4. Stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press dough against bowl into a ball. The dough will be very sticky and there may not seem to be enough liquid at first, but as you press the dough will come together. Do not overwork.

 

5. Place on a lightly-floured surface and pat into an 8-inch circle about 3/4 inch thick. Sprinkle with 1 tsp sugar. Use sharp knife or pizza cutter to cut into eight triangles. Place on parchment-lined cookie sheet, one inch apart. Bake until golden, about 15 - 17 minutes. Cool for five minutes and serve warm or at room temp.

 

Variations:

 

Cranberry/Orange: Add 1 tsp. grated orange rind to dry ingredients and use dried cranberries instead of currants.

 

Lemon/Blueberry: Add 1 tsp lemon zest to dry ingredients (or 1 Tbs lemon juice to sour cream mixture) and use dried blueberries instead of currants.

 

Cherry/Almond: Add 1/2 tsp almond extract to sour cream mixture and use dried cherries instead of currants.
