Super Simple Taco Bake

 

Not exactly low sodium, but definitely high convenience.  

 

Ingredients

 

  • 1 lb. ground beef
  • 1/2 onion, minced
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1-2 c. corn (frozen, canned, whatever)
  • sliced olives, if desired
  • 1/2 packet taco seasoning mix
  • tortilla chips (about 1/2 a 13.5 oz. bag)
  • shredded cheese

 

 

Brown beef and onion.  Add soup, tomatoes, corn, seasoning, and olives and mix.   In a greased 9x13, crush a layer of tortilla chips on the bottom.  Spread the meat mix on top.  Crush another layer of chips on top; sprinkle with cheese, and bake at 350 till heated through (about 15-20 minutes).  If it's going to be in the oven longer, wait a few minutes before topping with the chips and cheese, so they don't get too brown.
