Yeast Rolls

 

1 pkg dry or 1 cake fresh yeast

1/4 c. warm water

1 egg (room temp)

1 c. milk

1 T. sugar

1 t. salt

2 T shortening

3-3 1/2 c. flour (up to one half of total used can be whole wheat)

 

Dissolve yeast in warm water in a large bowl. Scald milk; add shortening, salt, and sugar and let cool to lukewarm. Add egg to yeast mixture and stir. Add milk mixture; stir in 1 cup of flour and beat until smooth. Gradually add enough flour to make a soft dough. Turn out on floured countertop and knead till smooth. Put in a greased bowl, cover with a dish towel, place in a warm area and let rise till double. Punch down, shape into rolls (balls or whatever shape you like) and place on greased baking pan close enough so they'll rise into each other. Cover with towel again and rise until double. Bake at 375 for 17-20 minutes or until light golden brown (a milk wash will help, but isn't imperative).
