Zucchini Casserole


Zucchini Casserole

 

Great in garden season, or if you’ve got some of your garden frozen.  Also works well with yellow squash or a mix.

 

     ½ c. melted butter or margarine.

     6 oz. pkg stuffing mix.

     2 lb zucchini, sliced (not too thinly)

     ¼ c. chopped onion

     1 c. shredded carrot

     1 can cream of chicken soup

     1 c. sour cream

 

Pour melted butter over stuffing mix and toss well.

Precook squash and onions together.  Mix with carrots and drain.

Combine soup and sour cream; mix with veggies.

In greased 9x13 or casserole dish, layer ½ stuffing mix, then veg., then rest of stuffing.

Bake at 350 30-40 min. or till brown.
